I have only tested this with the Dutch T-Mobile, but this is how you change the "SIM Lock" pincode:

You'll have to dial a specific code, in this format:

   **04*oldpincode*newpincode*newpincode#

For example, if your old pincode was "0000" (the default setting), and you'd like to change it to "1234", then you dial:

   **04*0000*1234*1234# 

And press the "Dial" button on your phone.

To change the SIM lock PIN code on T-Mobile, go to your phone's settings, find "Security" or "Lock Screen," select "Set up SIM card lock," and then choose "Change SIM PIN."
